Egg Drop Soup

8 ounces of sugar-free oil-free vegetable broth
1 cup water
1 small green onion, thinly sliced [all of the white and a little of the green] (about 2 tablespoons)
1/4 teaspoon ground black pepper
1 whole egg
3 egg whites

In a small saucepan, combine the broth, water, green onion and black pepper. Bring to a boil then gently simmer for 2 minutes. While waiting for the broth to boil, whisk together the egg and egg whites in a small bowl. While whisking the broth, slowly pour in the egg mixture to create egg threads in the broth. Pour into a serving bowl and serve immediately.

1 whole large egg - 70 calories
3 egg whites - 48 calories
Vegetable Broth - 15 calories
Green Onion - 5 calories

Total Calories: 138

Calories will vary by size of egg and brand of vegetable broth used.
