Coleslaw

This a good traveling dish. Mix it up in the morning and it is ready to go by lunch time. I like to buy pre-shredded cabbage to make prep easier.

Coleslaw

1 to 1 1/2 cups finely shredded green and/or red cabbage
2 tablespoons water
2 tablespoons apple cider vinegar
2 drops of liquid stevia or 1/2 packet of powdered stevia
1/8 teaspoon ground black pepper
1/4 teaspoon celery seed
A dash of salt

In a bowl, combine the water, vinegar, stevia, black pepper, celery seed and salt. Add the cabbage and mix to coat. Refrigerate and let it marinate for at least 30 minutes before eating.
