A lovely and quick dish featuring a nice lean protein option.

Veal Onion Scaloppine


100 grams/3.5 ounces veal escalope [steak/cutlet]
1/2 cup thinly sliced onion
1/2 grissini, finely ground
1/4 cup vegetable broth
2 tablespoon water
1 tablespoon skim milk

In a non-stick skillet over medium heat, cook the veal for 2 minutes on each side. Remove from pan. Add the onions to the pan and cook for 4 minutes then add in the grissini. Cook for a minute then add in the broth and water. Bring to a boil. Return veal to the pan, reduce heat to low and simmer for 1 minute. Add in the milk and heat through. Serve immediately.

This meal counts as 1 meat, 1 vegetable, 1/2 carb and total dairy servings for the day.

Onion - 23 calories
1/2 grissini - 12 calories
1/4 cup vegetable broth - 3.25 calories
1 tablespoon skim milk - 10 calories

Total Calories: 153.25
