Egg Over Leek

1 leek [the white part and a little green], thinly sliced (1 to 1 1/2 cups)
1 whole egg
3 egg whites
1 tablespoon cold water
Dash of Nutmeg [optional]
Dash of Cayenne Pepper [optional]
Black Pepper and Salt
1 grissini or piece of melba toast, crushed up [optional]

Preheat oven to 350 degrees F.

Soak the leek in cold water for 15 minutes. Drain then line them in a small nonstick oven-safe skillet. Sprinkle with black pepper and salt to taste. Bake 10 minutes.

Mix together the whole egg, egg whites and water. Season with the nutmeg and cayenne pepper.

Pour egg mixture over the leeks. Bake for 10 minutes and sprinkle on the crushed grissini [if using] then bake 5 more minutes.

Serves 1 and fulfills the protein and vegetable requirements for 1 meal. 1 carbohydrate serving too if using the grissini/melba toast.

1 whole large egg - 70 calories
3 egg whites - 48 calories
1 cup leek - 50 calories
(1 grissini - 24 calories)

Total calories: 168 (192)
(Calorie count will vary by size of egg and brand & type of grissini/melba toast. I used large organic brown eggs.)
